~ Production Notes ~

The Ortega grapes are hand-harvested and transported to the winery where they are crushed, but not de-stemmed, then pressed before being barrel-fermented to round out the lively acidity and delicate aromatics. Lees stirring fleshes out the mouthfeel and shapes the tannins from whole-bunch pressing.
